I love cooking, and cooking is even more fun when you have the right utensils. We replaced our pots and pans with non-toxic ones years ago, but we didn’t replace our bakeware until recently. Here’s a breakdown of some of the ingredients found in traditional pots, pans, and bakeware:
PTFE (polytetrafluoroethylene)
What is it: PTFE, commonly known as Teflon, is a synthetic fluoropolymer used in cookware and bakeware for its nonstick properties. Teflon coatings are everywhere, so I’m really glad I got rid of my Teflon pans years ago.

Risk of overheating: Heating PTFE-coated pans above 450°F (232°C) can generate toxic gases. These fumes can cause polymer fume fever (flu-like symptoms) in humans and are deadly to birds.
Environmental impact: PTFE is non-biodegradable and causes long-term environmental pollution.
Durability concerns: PTFE coatings can release particles into food when scratched or worn, potentially leading to the ingestion of harmful microplastics.
PFOA (perfluorooctanoic acid)
What is it: PFOA is a chemical previously used to make PTFE. Although many manufacturers are phasing out this ingredient, older cookware may still contain it.

Health risks: PFOA is a possible human carcinogen linked to kidney and testicular cancer, liver damage, thyroid disease, and reduced fertility.
Hormone disturbance: Interferes with hormone function, especially the endocrine system.
Persistence: PFOA is highly persistent in the environment and in humans, leading to risks of bioaccumulation and long-term exposure.
pollution: It has been found in tap water and contributes to widespread exposure.
PFAS (per- and polyfluoroalkyl substances)
What is it: PFAS are a group of thousands of chemicals, including PFOA and PFOS, that are sometimes referred to as “forever chemicals” because they do not break down naturally in the body. These include non-stick coatings and water-resistant materials.

Health concerns: Exposure to PFAS is associated with suppressed immune systems, increased cholesterol levels, cancer, and developmental problems in children.
Hormonal influence: PFAS mimic hormones and can disrupt reproduction, growth, and metabolism.
Ubiquity: PFAS chemicals present in soil, water, and air are nearly impossible to avoid in modern life. They have been detected in the bloodstream of a large portion of the population.
Cumulative exposure: Consuming even small amounts over a long period of time can cause serious health problems. I’m all about doing less of what we can control, and replacing pots and pans is a no-brainer on the list.
Heavy metals (lead, cadmium, mercury, arsenic, etc.)
What are they: Heavy metals are naturally occurring elements that can be toxic in certain forms or amounts. In cookware, these metals can leach into food if the materials are poorly manufactured or the coating deteriorates. I work with clients to test for heavy metals, and I see concentrations of mercury, arsenic, and aluminum rising daily.

lead: It causes neurotoxicity, especially in children, causing developmental delays and cognitive impairment. Even low-level exposure can affect cardiovascular and kidney health.
cadmium: It is known to cause kidney damage and is classified as a human carcinogen. If it accumulates in the body, it can cause bone demineralization.
mercury: It is associated with neurological and developmental disorders and is especially harmful to pregnant women and young children.
arsenic: Long-term exposure can cause skin changes, cardiovascular disease, and cancer.
Leaching risk: Cooking at acidic or high temperatures can accelerate the leaching of these metals into foods, posing greater health risks.
These chemicals can also leach into water systems, causing pollution and environmental problems. It’s a great idea to trade for your health and the planet.
