I was remembering a time when a pilot said, “Ah, soup season is here!”
I thought to myself…Soup season is always here.
But I understand his point. Some people enjoy warm and comforting soups at certain times of the year, such as when it’s chilly outside. But as someone who drinks piping hot soup on a scorching summer day, I couldn’t fully understand that feeling. I’ve been a lifelong fan of soup, no matter the weather or season.
For me, soup is the perfect meal. It’s easy to get tons of nutrients and protein, it’s super satisfying, and there’s nothing better than fresh sourdough or cornbread dipped in soup or chili. I have quite a few recipes on my blog (including gluten-free and dairy-free soups), but I was excited to copy and make this Panera Fall Squash Soup recipe. The exact recipe calls for heavy cream, butter, and brown sugar, but I love this lighter, dairy-free version. The ingredients are inexpensive and packed with tons of nutrients and fall flavors thanks to warming spices like cinnamon and nutmeg. You can also add curry powder as a little accent.
To keep things quick and easy, I used the Instant Pot, but this recipe is so versatile that you can make the soup in a large pot or Dutch oven over medium heat instead. Keep scrolling for the recipe card. If you try it, please let us know.
Panera Copycat Autumn Soup (Dairy Free)
material:
whole butternut pumpkin
3-4 medium sweet potatoes, peeled and cooked
1/2 cup pumpkin puree
1 onion
4 carrots
1 carton of vegetable soup
can of coconut milk
nutmeg
cinnamon
salt and pepper
Instructions:
Step 1
Cook the butternut squash. Cut in half, remove seeds, add to Instant Pot with 2 inches of water, and cook manually for 12 minutes. Remove the squash, drain from the Instant Pot, and let cool slightly.
Step 2
Next, add the broth, onions, carrots, pumpkin puree, cinnamon, nutmeg, salt, and pepper to the Instant Pot. Manually cook for 12 minutes.
Step 3
Give it a quick release, then stir in the butternut squash (it should come off easily when you scoop it out of the skin with a spoon), sweet potato, and coconut milk. Using an immersion blender, blend until smooth.
Step 4
Adjust seasoning as needed. Ours needed a little more salt and cinnamon.
Step 5
Top with olives, pumpkin seeds, or crunchy chickpeas. enjoy! !

small to medium butternut pumpkin whole
3–4 medium-sized peeled and cooked sweet potato
1/2 cup pumpkin puree
1 yellow onion, chopped
4 carrots (peeled and coarsely chopped)
1 vegetable soup carton
can of coconut milk
a pinch of nutmeg
1 teaspoon of cinnamon
Season with salt and pepper.

Precautions
Leftovers can be stored in the refrigerator for up to 1 week. Freeze half of it for easy, make-ahead dinners. I like to eat it with a big salad and fresh sourdough.
