They are simple yet flavorful and one of the many healthy dishes you can prepare for any meal or gathering. At Thanksgiving, we sometimes get unusual vegetables in our lavish spreads, but it feels so good to eat them. 😉 Plus, it’s super easy to sneak more veggies into this recipe (mushrooms and spinach are great), and there’s no canning involved in this dairy-free side dish. This recipe can be made ahead of time, making it perfect for busy weeknights or special occasions.

Pre-made vegan green bean casserole

This make-ahead vegan green bean casserole can be assembled in under 20 minutes and baked the day of your event or gathering. Just stir-fry mushrooms and garlic to make a simple roux, then mix in the rest of the ingredients. As a non-vegan who loves vegan recipes, this is a home run. Super easy and very delicious! – 8 ounces sliced ​​mushrooms

– 4 cloves of garlic (chopped)

– Season with salt and pepper.

– 1/4 cup all-purpose flour and 1/2 cup vegetable broth

– 2 cans (14.5 oz) of green beans. You can also use raw green beans if you prefer. Just cut it up, boil it for 5 minutes, and then boil it in cold water.

– 1/2 cup coconut cream (if you don’t want a slight coconut flavor, use 2 tablespoons Kite Hill cream cheese and 1/3 cup almond milk or other non-dairy milk). We’re making our own vegan version of cream of mushroom soup.

– Salted crispy onions (make sure they are vegan and/or gluten-free if desired)

Instructions

Step 1

First, fry the mushrooms and garlic in a little olive oil over medium heat until soft, about 5 minutes. Season well with salt and pepper.

Step 2

Add flour and vegetable stock and whisk until smooth. Remove from heat, add coconut cream (or Kite Hill and almond milk) and stir until smooth.

Step 3

Add green beans and 1/3 cup crispy onions. Transfer mixture to a casserole or baking dish. Cover and store in the refrigerator until ready to bake.

Step 4

When you are ready to bake the dish, preheat the oven to 350 degrees. Top the mixture with another 1/3 to 1/2 cup of crispy onions (you can also use breadcrumbs), cover with foil, and bake for 30 minutes until bubbly. . Before serving, top with additional crispy onions, if desired. We tend to be a little rough around these things. Very good!
