I’m sharing my favorite daily detox vegetable soup recipe.
Hello friends! How is it going? I hope you are having a wonderful morning so far. The pilot is off work today (!), so I’m looking forward to the morning hike and breakfast/coffee date. (If the kids are both in school, it feels like every time one of them takes vacation, the kid is home sick lol)
It’s still warm and hot in Tucson, but soup season has officially begun. TBH, all year round is super season for me. Even though it’s a blistering 115 degrees outside, I’m still eating hot soup inside. I love soup. Especially for lunch, because you can make a big batch of advan and pack in lots of nutrients. Customize it depending on what you have on hand, add some protein (like an egg on top, or shredded beef or chicken), and that’s my one of three: salad, soup, or smoothie.

This particular recipe is super simple made in the Instant Pot and is perfect for meal prep or a cozy, nutritious lunch or dinner.

vegetables:
1 sweet potato, peeled and diced
2 zucchini (chopped)
1 bell pepper (diced)
1 onion (chopped)
2 cloves of garlic (chopped)
1 bag of broccoli florets (washed)
2 carrots, peeled and chopped
beans:
1 can chickpeas (drained and washed)
1 can of kidney beans (drained and washed)
Dashi soup and seasonings:
4 cups vegetable soup
1 teaspoon thyme
1 teaspoon rosemary
1 teaspoon oregano
2 bay leaves
Season with salt and pepper.
Optional toppings:
avocado slices
Fresh herbs (parsley, coriander, etc.)
freshly squeezed lemon juice
How to make detox vegetable soup
Step 1: Prepare the vegetables
Peel and chop the sweet potatoes, zucchini, bell pepper, onion, and garlic.
Step 2: Add to Instant Pot and stir-fry
Add all the chopped vegetables to the Instant Pot and sauté in avocado oil for 3-5 minutes. Season well with salt and pepper. Add beans, seasonings, and vegetable broth to Instant Pot.
Step 3: Set up the Instant Pot
Set the Instant Pot to the “Soup” setting for 30 minutes.
Step 4: Spontaneous release
Let the Instant Pot release pressure naturally for 10-15 minutes, then release immediately.
Step 5: Serve and decorate
Add the soup to a bowl and add the avocado, fresh herbs, and squeeze of lemon juice.
